Baked Spaghetti

Now that I'm finished with law school, I'm hoping to have more time to try new recipes. I found this one on Pinterest and it's delicious.
 
You'll need:
 
1 pound of ground beef
1 can of spaghetti sauce
8 ounces of cream cheese
1/4 cup of sour cream
8 ounces of cottage cheese
stick of butter
12 ounces of noodles
2 cups of sharp chedder cheese
9 x 13 baking dish
 
Directions:
 
1. Preheat oven to 350.
2. Boil noodles.
3. Cook beef, drain and pour in spaghetti sauce.
4. Mix cream cheese, sour cream and cottage cheese.
5. Put slices of butter in the bottom of the dish.
6. Layer the dish with half of the cooked noodles.
7. Spread the cream cheese, sour cream and cottage cheese mixture over the noodles.
8. Add the rest of the noodles.
9. Add more slices of butter.
10. Pour the meat sauce on top.
11. Bake for 30 minutes.
12. Top with cheese (I bet mozzarella would be good too).
13. Bake for 15 more minutes.
 
This dish took me about 20 minutes to prepare and easily serves 6 people.

Coach Griffin's Stuffed Shells

Pat has been asking me to make these for awhile so...I decided to make them this weekend for our little football get together.
 
You'll need:
jumbo pasta shells
2 cans of tomato sauce
1.5 pounds of ground beef
garlic salt
Italian seasoning
large container of Ricotta cheese
2 eggs
16 ounces of mozzarella cheese
1/4 cup of dried parsley flakes
 
Directions:
1. Brown beef; drain; add tomato sauce, garlic salt, and Italian seasoning. Let simmer on low.
2. Cook shells; drain; let cool.
3. Mix ricotta, eggs, 12 ounces of mozzarella, and parsley flakes.
4. Stuff shells with mix.
5. Lightly cover the bottom of a 9x13 dish with meat sauce (you will want to save most of the sauce for pouring on top of the shells).
6. Place shells in dish.
7. Cover shells with the rest of the meat sauce and sprinkle mozzarella on top.
8. Bake at 350 for 40 minutes.
 
Serves around 10.

Sandy is Having a Baby!

One of my best friends, Sandy, is having a baby BOY! I'm so excited and I can't wait to meet him. He's scheduled to arrive on October 22.

How to make this cute baby name banner...
1. Download a cute, block font to Word from dafont.com.
2. Print individual letters on scrapbook paper.
3.  Cut them out.
4. Tape the letters to onesies. 
5. Close pin the onesies to some twine & you're done!

Puppies

Pat bred Sipsey with some celebrity lab, named Punch, a couple of months ago and she had her puppies last Wednesday, June 6th.  She had 2 girls and one boy.  We are keeping one of the girls and naming her Yeti.

The day they were born...

Their eyes are still closed and should open in a couple of days.  All they do is eat and sleep, but they are so cute and sweet.  I'm in love!

Cinco de Mayo

I LOVE celebrating Cinco de Mayo because Mexican food is my favorite. I planned a fiesta themed wedding shower for Bryan and Weezie.




(This is just Betty Crocker yellow cake mix & cupcake icing. I added the lime to make it look festive.)


Here are the recipes...

TACO SOUP

You'll need:
2 pounds of ground beef
2 packets of taco seasoning
2 packets of ranch dressing
1 onion (chopped)
2 cans of corn
2 cans of black beans
2 cans of kidney beans/pinto beans or chili beans
2 cans of diced stewed tomatoes
2 cans of rotel

Directions:
1. Brown the beef with the onion and drain it.
2. Put the cooked beef, 1 1/2 cups of water, taco seasoning and dry ranch dressing into a large pot.
3. Bring to a boil, then let it simmer on low for 5 minutes.
4. While you're waiting, open all of the canned vegtables.
5. Add the rest of the ingredients and cook on low for 15-20 minutes.   

Cut the recipe in half to make a smaller batch. Also, this stuff freezes really well.


HOMEMADE SALSA


(I expected the salsa to be red...but it turned out green. I figured I did something wrong because the salsa at Jalapenos is red, but it still tasted delicious!)

You'll need:
6 tomatoes
1 cup of cilantro
1 can of sliced mild jalapenos

Directions:
1. Cut the tomatoes into chucks and throw them in a blender.
2. Add the cilantro.
3. Pour in the jalapeno juice.
4. Throw in 5 or 6 jalapenos.
5. Blend well.


LIME MARGARITA
(this makes approximately 1 gallon)

You'll need:
3 cans of frozen limemade
3 cans of Corona Light beer
2 liter Sprite
24 ounces of tequila

Directions:
1. Mix all ingredients together.
2. Add ice or blend in a blender with ice.


TISSUE PAPER BALL DECORATIONS


You'll need:
10 sheets of tissue paper for each ball ($0.99 at Hobby Lobby)
floral wire
fishing line
scissors  

Directions:
1. Leave the 10 sheets together and fold them like an accordion.
2. Wrap floral wire around the center.
3. String fishing line under the wire.
4. Pull the tissue paper apart (toward the center) and fluff the balls.

Tacogi

So, after our exam today my law school buddy, Jessica went to Tacogi. It's a new restaurant across from Brown's Corner, beside Chuck's. She texted me and told me how good it was so Pat and I decided to try it out tonight.

Y'all, it was phenomenal! The owner of Bento's opened it and it's a mix between Mexican and Japanese - my two favorites. They have tacos and burritos. You pick a meat and a sauce and it also comes with fried rice, lettuce, tomatoes and cheese.

I had the Tacogi chicken (which is the same thing as Bento's "Bento" chicken) burrito with shrimp sauce. Pat had the same thing, but he got his without the lettuce, tomatoes and cheese. One burrito is enough to fill you up and it's only $5.95.

It reminds me of a Chipotle burrito, but with Japenese food inside - such a good idea!

Concerts & Crawfish

We have had so much fun the last couple of weekends. We saw Hank in concert and loved it, of course. We enjoyed Easter with both of our families. I saw Luke Bryan with the girls, and he put on one heck of a show. It was a blast. 



This past Saturday we had a crawfish boil. The weather was perfect, the food was yummy, and we had such a good time hanging out with our friends. We bought the crawfish from Steamer's Seafood Market - definitely check it out if you haven't. They have lots of fresh fish that is reasonably priced. Sunday night, Pat peeled the left over crawfish, fried it and made crawfish po' boys. We tried to make them just like Shrimp Basket (they were good, but not Shrimp Basket good). We're pretty pumped about getting a Shrimp Basket though. I still haven't heard where exactly it's going to be or the exact date it's opening.

Now I've got to get serious and study hard for 3 more weeks and then it's summer! This summer I'm going to be working for Turner & Webb and taking 2 classes. Pat's going to be training dogs, coaching club wrestling and putting together a youth wrestling program, which will start this fall. We've got lots of friends getting married and having babies this summer. I just registered for my last semester of law school. God is good and we are so very blessed!
